This evening’s meal is inspired by Marcella Hazan.
Marcella Hazan is credited as the chef who changed how American’s prepared Italian food. An Italian-born transplant who found herself alone in a tiny New York kitchen with a young family to feed, Hazan recalled the flavors of home and set about to recreate them. Adopting traditional methods of Italian preparation as well as creating her own, she soon began giving cooking classes in her kitchen – which later led to a cooking school, contributions to the New York Times, and a succession of popular cookbooks.
