In this class, Judy will work with students to create dishes from the famed heel of Italy: Puglia. From handmade orecchiette pasta to hot chili-infused oil for the pantry (Olio Santo) this menu is sure to ignite culinary passion!
• Chickpea Soup garnished with Fried Pasta (Ciceri e Tria)
• Handmade Orecchiette Pasta with Broccoli Rabe, Kale, Garlic and Chili Pepper Flakes (Orecchiette con Rapini e Peperoncino)
• Mussels baked in a casserole with Rice and Potatoes (Tiella con Patate e Cozze)
• Tender Squid with Seasoned Breadcrumbs and Lemon (Seppie ripiene)
• Sweet Cookies to have with Wine (Occhi di Santa Lucia)
