In this class students will prepare some favorite foods from Calabria and Puglia in Southern Italy. Rosetta Costantino celebrates her culinary heritage by sharing some of her family’s beloved recipes, including crostini with fresh mozzarella and anchovy sauce from Rome. For a sweet finish, students will bake wonderful cookies so popular all over Southern Italy and beyond.
• Crostini with Mozzarella and Anchovy Sauce (Crostini con Mozzarella)
• Homemade "Gnocchi-shaped" Pasta with Broccoli Rabe (Cavatelli con Cime di Rape)
• Baked Chicken with Potatoes, Tomatoes, and Hot Pepper (Pollo alla Calabrese)
• Cauliflower Salad (Insalata di Cavolfiore)
• Almond Macaroons (Amaretti)
