In this basic sauce class, classically trained French chef Pierre Lagourgue will teach students the traditional methods of preparing classic “foundation” sauces with instruction and personal guidance. Join Pierre as he shares ideas for incorporating classic sauces into menus and creating some popular variations of these sauces.
• Roux-based Sauces: Bechamel, Veloute, Brown Roux/Sauce Espagnole
• Pan and Butter Sauces: Beurre Blanc, Beurre Citron
• Egg-based Liaisons: Hollandaise, Bearnaise, Mayonnaise
