For the first course you'll have a typical coteghino con zabaione. This typical Emilian country sausage, very lightly crusted with cheese, is made succulent by a delicate drizzle of savory wine sauce. For the second course you are going to do a "pasta course" that shows off one of the many varied uses of balsamic, risotto con verdure glassate. This tender rice is tossed with balsamic glazed winter vegetables and tossed with Parmigiano Reggiano. For a main course you'll try a stunningly simple, but different veal - costolette di vitello modenese. Thiese delicate veal chops are lightly breaded, scented with fresh celery and served with tender fagiolini al limone - young green beans with lemon and pine nuts. Finally for dessert you'll try an extravagant chocolate cake - torta cioccolato al vino rosso. This Modenese cake, as you can tell by the name, is made with red wine and topped with chocolate-Mascarpone glaze.
