Dinner in Naples, Cooking Class at the Depot Restaurant

In most people's mind Naples brings to mind one thing-pizza.  Naples is justifiably famous as the birthplace of pizza Margherita (the classic red, white and green pizza of the Italian flag,) although there have been varieties of flatbreads all over Italy and all over the world-long before Neapolitan pizza was born.  Nonetheless, there are few dishes more wonderful in their simplicity than a perfectly made pizza from Naples...

For our first course we have a INSALATA SANTA LUCIA.  This is a typical Spring salad from the countryside of Campania, showing off the best of young spring produce with gently blanched spring onions and asparagus in an "agrodolce" sauce.

For our second course, naturally, we are going to do that great Naples classic, with tomato, fresh basil, and fresh mozzarella--PIZZA MARGHERITA.  Many of you may fear that it is not possible to make a truly perfect tender-crisp crust at home.  It is!  We have a recipe that accommodates home ovens and produces excellent results-even without a giant stone oven.   

For a main course we had to show you a simple country dish that "Nonna" would make--BRACCIOLE NAPOLETANA.  These individual savory little pork scallops are stuffed with cheese, olives, bread, and herbs-and baked in tomato sauce.  Accompanying the pork is a wonderful GATTO-a potato torte with cheese.
 
To end the meal, we are going to do a light and delicate dessert from Sorrento across the bay--MOUSSE DI LIMONCELLO.  We just fell in love with this luscious, tart mousse--and we are making it with our Chef's own house-made limoncello.  We will say no more--wait until you taste it!

(The class is the same one both days, so choose whichever date you most prefer.) 

Class will begin promptly at 6:30 PM in the kitchen of the DEPOT Restaurant. (The doors open at 6:15.)  Dress comfortably, bring a pen or pencil, and be prepared to relax and have fun!   Class includes the four-course dinner with full portion servings, wines to match each course, and the recipes.  Students who have attended in the past know it is important to come hungry-you certainly won't go home able to eat another bite!

Tuition is $85 per person. Classes do fill up very rapidly every year so it is recommended that anyone interested in a space return the form with their check as soon as possible.  Spaces cannot be held without the tuition form and check or credit card.   Gia will send a card confirming the reservation. After that, there are no other reminders-be sure and save the confirmation card as your reminder of your class.    Call or email Gia if you have any questions at all.
