2010 SUMMER GRILLING CLASS
SARDINIAN GRILL
WITH WHOLE ROAST PIG
The harvest of a whole pig in Sardinia is a time of celebration that calls on the most ancient traditions of Sardinia's culinary history. The whole family and the village partake in the festivities. A fire is built with aromatic woods such as juniper, olive, and oak. The pig is affixed to a strong stick or steel sword that is pushed into the ground in front of the fire, and then basted with chunks of pork fat. Once the pig is done, it is smothered with myrtle, bay, and sage leaves and left to steam before carving.
We thought to ourselves...that sounds like fun! So we have created a menu for this year's grill class based on the ancient food of this still wild and primitive island...
