Interest in olive oil is booming due to its fantastic flavor and health benefits.This 2-day course will train you how to use olive oil to complement and enhance your cooking by first recognizing olive oil’s complex flavor attributes. Each day, over 20 delicate, medium, and robust olive oils, from all over the world, will be tasted and paired with various foods. Tastings will be led by Paul Vossen, a recognized University of California olive oil expert along with cooking demonstrations by chefs Fran Gage, John McReynolds and Lisa Lavagetto. Together we will learn how to how to evaluate olive oil by comparing: single varietal oils and blends; ripe and green fruit flavors; and the influences of cultural practices, fruit handling, and processing on quality.
